We make our Capicola using the "heart" of our pasture-raised pork butts- an inner section of muscles with exceptional marbling that we then rub and cure with a special spice blend for several weeks. Then it's off to our smoker to develop its signature final smokey-spiced flavor. Pro-to: slice and use our Capicola as a pizza topping!
