This roast is honestly one of my favorite things about Christmas each year. Dry brine it with a generous amount of Diamond Kosher Salt in the fridge for a day or two, and it will just melt in your mouth!
By far the best prime rib I've ever had and I've been cooking prime rib for the holidays for 30+ years. I came upon Stillman's this Summer at farmer's markets and started by purchasing some sausage for the grill. So glad I did. I've been a fan ever since! I've ordered Prime Rib twice now from Stillman's and each has been spectacular. The second time I asked them to tie and trim the roast for me and it was perfect. It's amazing to find such high quality meats, so expertly butchered at a small local level. I'll be buying again for sure.
